Ingredients:
- 1/2 cup steel cut oats
- 1 cup unsweetened almond milk
- 1/4 cup water
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon ground cinnamon
- Pinch of salt
- 1 ripe banana, mashed
- 1 tablespoon honey or agave nectar
- 1/4 cup dried fruit (optional)
Directions:
- Combine the oats, almond milk, water, vanilla, cinnamon, and salt in a slow cooker.
- Cover and cook on low for 7 to 8 hours, or until the oats are tender and cooked through.
- In the last hour of cooking, stir in the mashed banana and honey or agave.
- Stir in the dried fruit, if using, during the last 5 minutes of cooking.
- Serve warm, topped with additional banana or dried fruit, if desired.
